So… I baked the red velvet cupcakes on two trays. The ones on the top tray rose beautifully, forming little domes. The ones on the lower trays are uneven with overhang — muffin tops. Obviously the heat in my oven is uneven, but how does the uneven heat relate to the shapes of the cakes?
